This narrative review summarizes historical food chemistry and toxicological literature regarding dietary exposure to carcinogenic N-nitroso compounds (primarily nitrosodimethylamine, or NDMA, and alkylnitrosamides) formed through reactions with nitrites or nitrogen oxides during the processing of cured meats, fish, and beer.
What was found
NDMA concentrations in cured meats (particularly cooked bacon) typically reached ~10 mcg/kg (up to 100 mcg/kg), yielding approximately 1 mcg NDMA per 100 g serving. Japanese smoked and cured fish exceeded 100 mcg/kg. Historical levels in German beer reached up to 70 mcg/L, though typical concentrations were lower at 5–10 mcg/L. Dietary nitrosamine concentrations declined substantially over the 1970s–1990s following reductions in nitrite additives and improved control of malt exposure to nitrogen oxides during brewing. Direct evidence for the presence of brain-tumor-inducing alkylnitrosamides in cured foods remained limited.
