What was done

Concentrations of taurine, carnosine, coenzyme Q10, and creatine were measured in beef liver, several beef and lamb muscles, and cooked versus uncooked meat. Differences between predominantly red muscle (beef cheek) and predominantly white muscle (beef semitendinosus), variation across eight lamb muscles, and the effect of slow cooking (90 min at 70 °C on lamb longissimus and semimembranosus muscles) were evaluated.

What was found

Beef cheek muscle had 9.9 times as much taurine and 3.2 times as much CoQ10, but only 65% as much creatine and 9% as much carnosine compared to beef semitendinosus. Lamb muscles showed higher taurine but slightly lower carnosine, CoQ10, and creatine than beef semitendinosus, with significant variation across eight distinct lamb muscles. Slow cooking significantly reduced taurine, carnosine, and creatine content (P<0.001), slightly increased CoQ10, and produced a four-fold increase in creatinine.

Why it matters

This study provides quantitative baseline data on non-protein bioactive compounds in red meat, showing that dietary intake estimates must account for specific muscle cuts and cooking methods.

Limits
