What was done
Defatted and partially defatted mustard seed meals were ground into powders with particle sizes from 5 to 300 μm. Samples were sealed in glass jars adjusted to 85% or 100% relative humidity at 5, 20, or 35 °C. The release of volatile allyl isothiocyanate (AITC) was quantified using gas chromatography.
What was found
AITC release rate and total amount increased with higher relative humidity and higher temperature. Release rates were also influenced by particle size and lipid content. Across the tested conditions, AITC release ranged from 2 to 17 mg/g of mustard seed meal powder within 24 hours.
Why it matters
It demonstrates that ambient humidity can activate the enzymatic release of antimicrobial AITC from mustard byproduct meal, supporting its potential development as a natural active packaging material.
Limits
This was an in vitro chemical release study with no direct tests on microbial growth, food shelf life, or sensory impacts on food products. Precise sample sizes and statistical variance measures were not reported in the abstract.
