What was done
Investigators evaluated the effects of microwave and conventional low-temperature heating on glucoraphanin (GLR) and sulforaphane (SFR) levels in broccoli relative to raw controls. They tested temperatures ranging from under 40°C to 70°C and compared microwave power outputs (475 W vs. 950 W).
What was found
Both mild heating and microwaving increased GLR and SFR concentrations compared to raw broccoli. SFR concentrations were very low below 40°C, increased substantially from 40°C to 60°C, and were undetectable at 70°C. Compared with conventional heating, microwave heating increased GLR and SFR yields by approximately 80% at 50°C and 60°C. At these temperatures, high-power microwave treatment (950 W) produced over 40% more SFR than low-power treatment (475 W).
Why it matters
These findings identify specific temperature (50–60°C) and microwave power parameters that maximize the enzymatic conversion of glucoraphanin to active sulforaphane while preventing the heat inactivation seen at 70°C.
Limits
This was an in vitro food composition study with no human consumption, bioavailability, or clinical outcome data. Sample size, broccoli cultivars, moisture levels, and exact heating durations were not detailed in the abstract.
