The authors compared the nutritional, physical, and chemical properties of red deer venison across three harvest sources: farmed venison from New Zealand and wild deer from Spain harvested via either traditional autumn-winter driven hunts (monteria) or summer selective stalking. Assessed variables included protein, amino acid content, intramuscular fat, fatty acid composition, shear force, and pH.

What was found

New Zealand farmed venison showed higher protein content, lower shear force, and a lower n-6/n-3 fatty acid ratio than Spanish wild venison (P < 0.01). Spanish wild venison had higher total, essential, and non-essential amino acid content (P < 0.01). Within Spanish deer, winter driven-hunt meat had lower intramuscular fat and saturated fatty acids, higher polyunsaturated fatty acids (P < 0.01), and higher pH (P < 0.001) relative to summer stalked deer.
