Sprouted whole wheat flour showed 61 ± 3% of particles distributed between 53 and 209 microns, and no more than 10 ± 3% between 297 and 497 microns. Replacing 20% refined flour with sprouted whole wheat flour produced a farinograph quality index of 200 ± 3 mm, a finished bread specific volume of 4.21 ± 0.62 mL/g, total deformation of 13.7 ± 0.3 mm, plastic deformation of 4.3 ± 0.3 mm, and elastic deformation of 9.4 ± 0.3 mm.
Why it matters
