What was done

Carbohydrate content and secondary metabolite composition were measured across different tissues of Belgian endive (*Cichorium intybus* L. var. *foliosum*) during cultivation, cold root storage, and dark forcing.

What was found

Belgian endive heads contained between 336 and 388 mg/g dry weight of total soluble carbohydrates, predominantly fructose and glucose. Head terpenoid and phenolic profiles remained constant throughout the cultivation season regardless of root storage time. In roots, inulin degraded during storage and forcing, yet over 70% of total soluble carbohydrates remained unused after forcing. Taproots also contained high amounts of phenolics (predominantly chlorogenic acid and isochlorogenic acid A) and terpenoids (predominantly sesquiterpene lactones).

Why it matters

This study shows that discarded post-forcing Belgian endive taproots retain high levels of soluble carbohydrates and bioactive compounds, establishing a chemical basis for agricultural byproduct valorization.
