The authors analyzed the amino acid profiles of multiple samples across eight different dried bovine dairy powder streams: whole milk powder (WMP), skim milk powder (SMP), cheese whey protein concentrate (WPC-C), lactic acid casein whey protein concentrate (WPC-L), high-fat whey protein concentrate (WPC-HF), hydrolyzed whey protein concentrate (WPH), whey protein isolate (WPI), and demineralized whey protein (D90).
What was found
The abstract does not report numerical concentrations, standard deviations, or sample counts. Directionally, WMP and SMP had similar amino acid profiles. WPC-C showed higher levels of threonine, serine, glutamic acid, and proline, but lower levels of tyrosine, phenylalanine, and tryptophan compared to WPC-L. WPI and WPC-HF differed in all measured amino acids except histidine. D90 exhibited consistently lower amino acid concentrations than WPC-C.
Why it matters
This work shows how downstream dairy manufacturing methods—such as acid versus rennet casein separation or nanofiltration—substantially modify the specific amino acid content of commercial protein powders.
Limits
