Why it matters
Dietary Neu5Gc can incorporate into human tissues and elicit inflammatory responses. Identifying that processing and formulation may affect the presence of Neu5Gc-containing glycans in commercial cheeses helps inform future dietary exposure assessments.
Limits
The study is a pilot analysis with a sample size of only two commercial products. It used purely qualitative detection without quantitative concentration measurements and did not evaluate human bioavailability, absorption, or clinical inflammatory endpoints.
