Buckwheat grain contains 65% to 75% starch (dwb) and 13% to 14% protein (dwb) free of gluten. It contains minerals (Zn, Cu, Mn, Mg) and bioactive compounds, including the flavonoid rutin and fagopyritols. Despite established prairie production and high-yielding cultivars, Canada primarily exports raw buckwheat rather than processing it domestically.
